Vegan Apple Butter Bread
Oh boy, you’re in for a treat once you taste this apple butter bread. It’s so delicious that I cannot stop eating it, and it’s vegan! I like to spread extra apple butter on it or a dollop of whipped cream for a real Fall treat!
Total Time: 1.5 hours (not including making homemade apple butter)

Ingredients:
- 1 cup apple butter (recipe here)
- 2 tsp cinnamon
- 1/2 tsp clove
- 1/2 cup soy milk
- 1/4 cup canola oil
- 1 1/4 cups brown sugar
- 2 flax eggs (see recipe here, can substitute real eggs if desired)
- 1 3/4 cup all-purpose flour (whole wheat flour can be substituted for an even healthier option)
- 1 tsp baking soda
- 3/4 tsp salt
Directions:
1. Mix apple butter with cinnamon and clove in a large bowl.
2. Mix in wet ingredients: Add in soy milk and whisk, then mix in the oil, then mix in the flax egg mixture. Mix until smooth.
3. Mix dry ingredients: in a separate bowl, mix flour, baking soda, and salt.
4. Add dry ingredients to the wet ingredients and mix until smooth.
5. Pour mixture into a greased standard 9” loaf pan.
6. Bake in the oven at 350 deg F for about 60-65 minutes (until bread is cooked through).
7. Let cool and enjoy!
